This week challenge was not to eat any processed foods. About 55% of you wanted to me to challenge my self in eating whole meals without the addition of anything processed. For the entire week I plan on documenting the meals I’ve eaten and how I have been feeling through out the day. I hope you enjoy this week’s challenge and let me know what you want to see next!
Day 1: Monday was really busy but productive. I went to a spin class then went for a walk. Afterwards my sister and I went grocery shopping then came home and ate some stuffed bell peppers with rice and meat for an early lunch. I was running errands all day and then had work till 8, so I ate dinner around 8:30. I was pretty hungry and forgot to take a picture before I started eating but remembered mid way lol.
Super simple meal with the right amount of protein, carbs, and fats along with some greens 🙂
My half eaten salad lol. In it was spring mix, shredded meat,tomatoes, onions, red cabbage, cole slaw mix, and some greek yogurt with lemon and salt for my dressing.
Day 2: I wasn’t hungry much so I just ate a banana and 2 dates for breakfast. I left the house around 11:30 to pick my sister up so we could go hiking. Around 12 I started to crave a lot of things haha. Kind of why I really prefer not eating a late dinner because that just messes the next day up. I decided to come home before our hike so I could eat something. I had the same thing I had yesterday but this time I mixed my yogurt with some chopped up tomatoes,onions, and purple cabbage. After the hike I went to the gym a bit so I can get back into the groove after 2 weeks of not going. For a late lunch/dinner I had banana pancakes arounds 4:30 ish and they were surprisingly so delicious. I plan on writing about my favorite recipes so if you are interested, let me know. I wasn’t really that hungry the rest of the day but was in a munching mood so I just had some carrots and water. I did eat a little rice and veggies when I was cooking for the rest of the week but not really an actual meal.

Day 3: Today I went back to school and planning my meals are really difficult because I am out all day. Thankfully I took some time out of my night yesterday and made some food for the rest of the week. I had my overnight oats (not pictured, full recipe coming out soon) for breakfast around 10am and was full for a while. One of my sisters wanted to hang out for a bit so we went to Panera for lunch around 2 and had some soup so I had some squash soup with sprouted bread (not really sure what was in it but let’s hope it was healthy haha). Later that night I wasn’t that hungry but I knew that if i didn’t eat anything I would be tempted to eat something I shouldn’t so I had one of my favorite simple meals, baked chicken and honey.
Don’t knock it till you try it. SO delicious 🙂
Overall, it was going great until day 3. I really wanted something sweet, mainly chocolate and just a jar of nutella haha. This isn’t my usual craving but when I try to avoid sugar I have the craziest cravings. Hopefully these will go away soon as time passes by.
